Ingredients
- Scampi tails: 6 pieces (3 per person)
- Watermelon: 6 cubes (approx. 2.5 cm each), compressed
- Black lime salt: ½ tsp
- Sea salt: to taste
- Avocado: 1 medium, ripe (cut into neat slices or cubes)
- Snow peas: 6 pods, trimmed and cut in half diagonally lengthways
- Avocado oil: 2 tbsp
Method
1. Compressed Watermelon
- Cut watermelon into 6 uniform cubes.
- Vacuum seal with a pinch of black lime salt
- Chill for at least 30 minutes.
2. Scampi Tails
- Clean and devein scampi tails.
- Lightly season with sea salt and avocado oil.
- Torch until lightly caramelized but still tender.
3. Avocado
- Cut avocado into slices
- Lightly brush with avocado oil and season with a pinch of salt.
4. Snow Peas
- Blanch in salted boiling water for 30 seconds.
- Shock in ice water.
- Cut each pod in half diagonally lengthways.
